Dr Matthieu Arnoult is an applied economist with twenty years of experience working on food-related issues such as consumer behaviour, diet, health and social implications, as well as sustainable farming. His background includes plant physiology, agronomy, and teaching in quantitative methods and data analytics.

Matthieu is a learning coach and module convenor on a range of apprenticeship programmes, including Improvement Leader and Leadership & Management Professional. He also contributes to teaching in data analytics and quantitative methods at undergraduate and postgraduate levels. His research focuses on the use of econometric modelling to address challenges in farming systems and food consumption. Key areas of interest include climate change and sustainable agriculture, healthy and sustainable diets, and the impact of dietary requirements on food demand. Matthieu holds a PhD in agricultural economics from the University of Reading, an MSc in plant physiology from Paris Sorbonne University, and an MSc (Ingénieur agronome) in agricultural economics from the École Nationale Supérieure Agronomique de Rennes.
